Soupe Ramen. Ramen masters spend years honing their craft. Gently pull the noodles apart with tongs.
It consists of Chinese-style alkaline wheat noodles (chūkamen) served in a meat-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork (叉焼, chāshū), nori (dried seaweed), menma, and scallions. Ramen au poulet et au sésame. Located on Lower Georges Street in Dún Laoghaire, SOUP Ramen is a neighbourhood restaurant serving up ramen, fermented foods, kombucha and cocktails in a casual dining environment.
You can find it with fish, beef, pork or chicken stock.

Cover and bring to a boil over high heat; stir to break up noodles. Nitamago, which is on the hard-boiled side, is also good. The fourth, Tonkotsu is actually NOT a soup base and is actually a BROTH.
